Saiki Sushi

Located beside the sea in southeastern Oita, the city of Saiki can lay claim to some of the most delectable sushi in the world. The warm-flowing waters of the Kuroshio (“Black Stream”) Current and Bungo Sea Route bless the area with varied and abundant fish, and these fresh catches truly shine when prepared with the exquisite craftsmanship of Saiki’s sushi chefs, using time-honored techniques that go back generations.

In Saiki, you’ll find fourteen establishments serving truly artistic and delicious sushi fashioned from over 50 varieties of fish—from the extravagant like tai (sea bream), hirame (Japanese flounder), and sazae (turban shell) to everyday offerings like aji (horse mackerel) and iwashi (sardine). Locally sourced, locally consumed is a motto for these culinary artisans, reassuring visitors that they’re partaking of only the most strictly chosen ingredients. And as well as the fish, the rice—which brings out the flavor and texture even more—is proudly grown by local farmers.

Traditional Japanese hospitality centers on the concept of a once-in-a-lifetime encounter (ichigo-ichie), and Saiki’s sushi ticks just that box. Visit this delightful seaside town, and let its sushi masters treat you to a dining experience to remember.
